Lady Grey Cupcakes with Yuzu Cream

I love tea, be it Chinese, English or Citrus. I do have a collection of teas in my pantry and Lady Grey is one of them.

Lady Grey is a light black tea blend, which has been flavoured with lemon and orange and scented with a hint of Bergamot. The aroma is definitely citrus.

I used one tablespoon of grinded tea leaves to bake six cupcakes. I ended up with six nicely scented cupcakes and for that definite citrus kick I topped them with Yuzu cream. Trust me, Yuzu and Lady Grey are very good partners.







Ingredients:
130g self-raising flour + 1 tbsp grinded tea leaves
50g butter, room temperature
50g sugar
1/4 tsp salt
1 egg
65ml milk

Method:
1. Cream butter, sugar and salt till light and fluffy.
2. Add in the egg and beat till well blended.
3. Stir in half the flour mixture and half the milk. Mix well.
4. Add in the rest of the flour mixture and milk. Mix till just combined.
5. Pour batter into muffin tray lined with paper liners till they are 80% full.
6. Bake at 175C for 20 - 23 minutes or till cooked.
7. Top with frosting of your choice.

Hi! I love reading your blog. I make some crepe using your recipe yesterday. It was really good. I tweaked it a little by adding some maple syrup.

I'll be going HongKong in Dec and was wondering if you could tell me where are the food places that I shouldn't miss when I m there. Ha...I m very greedy. Always thinking of food when I visit a country. Thanks in advance!!

I am impressed with your innovative approach of utilizing flavored tea leaves in your baking and with your baking magic wand they come out a sure winner! Did you grind the leaves as fine as a powder like using a coffee grinder? thanks again for sharing this recip.

hi,,sis florence,,i had tried out the marble cake,,but instead of using cake flour,,i used plain n corn flour,,but the texture of cake comes out like sara lee pound cake,,is this e correct texture n it,could u tell me where did i go wrong,,thanks---jean

Buttermilk = 通常指發酵過的酸味牛奶 :)
