Raspberry Chocolate Cheesecake

Made a cheesecake according to the order for a birthday girl. She wanted white chocolate, 66% dark chocolate, cream cheese and raspberries.

The white chocolate was melted and mixed into the cream cheese mixture while the dark chocolate was used for the topping.

The frozen raspberries were mashed and folded into the cream cheese mixture. Fresh raspberries were used to decorate the cake.

This is the cake!

Florence,

I love your blog! I will definitely try your Raspberry Chocolate Cheesecake. I tried your durian cheese cake and everyone loved it!

Can you give me advice on how to remove the cake from the spring form pan without ruining the crumb base?

Also, for the green tea chiffon cake, it didn't come out soft, it was too hard, any advice?

You can use any chilled cheesecake recipe.
The recipe for chocolate topping is from the Chocolate Praline Cake. :)

Caryn,
I do all my chilled cheesecakes in a springform cake pan.
First, put a piece of baking paper larger than your cake pan over the base of the pan, lock the cake pan and put a piece of cake board on it then do the biscuit base.
When the chilled cake is set and done, use a hair dryer to heat around the circumference of the cake ring to remove the chilled cake nicely. Then with the help of the larger than cake pan baking paper, you can just lift up the cake and the cake board will support the cake.
