Kamquat Butter Cake

I used the kamquat preserve which I made on 28th November to bake this soft and moist butter cake.





Ingredients: (22 x 6.5cm loaf pan)
100g butter
80g sugar
1/4 tsp salt
3 eggs
100ml skim milk
80g kamquat preserve
200g cake flour
2 tsp baking powder
extra kamquat for topping

Method:
1. Sieve flour and baking powder. Preheat oven at 180C.
2. Cream butter, sugar and salt till fluffy.
3. Add in egg one at a time, beating well before the next addition.
4. Add in 1/3 of the flour and 1/3 of the milk, beat at the lowest speed of your electrical beater. Repeat till you finish the flour. Lastly stir in the kamquat.
5. Pour batter into a greased and floured loaf pan.
6. Bake at 170C for 15 minutes, remove from oven and quickly top the cake with extra kamquat preserve. Bake for a further 35 minutes or till cooked and golden brown.

Hi Florence, I loving reading and trying your recipes, ( I am still new in baking & cooking), my sis brought some homemade kamquat jam for me from Australia, can I use it to bake this cake, it looks delicious, yummm...also, can I link you up to my blog ?

HI Florence

The cake looks so delicious but i don't have the kumquat preserve. do u think i can replace it with the honey citron tea from korea? I have this impression that they may be similar in terms of taste and texture...thks
