Wholewheat Loaf

Another exciting experiment with fresh yeast. For this loaf, I used wholewheat flour, bread flour, wheat germ, fresh yeast, sugar, salt, milk and water. Apply egg wash and sprinkle the top with wholewheat flour.

This is for breakfast tomorrow morning.


Ingredients:
210g bread flour
90g wholewheat flour
15g wheat germ
6g fresh yeast
15g caster sugar
15g brown sugar
30ml milk
180ml water

1/2 tsp salt
30g butter (room temperature)

Hi florence,

I have been trying to bake wholemeal loaf but without success. Can you post the method you used. As I have only instant yeast available, how much would the amount need to be and does it affect the final result of the loaf. Thanks May
