Mixed Berries Muffin

This mixed berries muffin is full of goodness as I have used fresh blueberry, raspberry and strawberry to bake it.

As it is well reported that these berries are full of antioxidants linked to potential health protection against several human diseases. They are also rich in Vitamin C. So these berries are so full of goodness.

Raspberry ranked near the top of all fruits for antioxidant strength.

Enjoy this muffin without guilt then!

Ingredients:
(A)

45g bread flour
100g cake flour
1/2 tsp baking powder
1/4 tsp baking soda
pinch of salt
55g sugar

3/4 cup mixed berries or more (coat in flour)
I used fresh blueberry, raspberry & strawberry

(B)
1 egg (lightly beaten)
2 tbsp milk (I used skim milk)
120g yogurt (I used fat free yogurt)
60g melted butter (I used 50g butter and 10g corn oil)
1/2 tsp vanilla essence

Method:

1. Mix (A) together.
2. Mix (B) together in a mixing bowl.
3. Pour (A) into (B) and mix everything in 5 strokes.
4. Spoon batter into muffin tray lined with paper muffin cups up to 80% full.
5. Bake at 190C for 20 minutes - 30minutes or till cooked.

these muffins look so juicy, i will definity give it a try.

When you bake the muffins the fruits will not sink to the bottom of the muffins.
