Dark Chocolate Muffin

Have been craving for some chocolate treats lately but not in the mood for any baking challenge or stress, so I made these easy dark chocolate muffins studded with strawberry chocolate chips.

To make these dark chocolate muffins you need to use Cacao Barry cocoa powder. This rich cocoa powder has an intense, glowing red colour and provides a deep chocolate flavour. Hence you won't need to melt dark chocolate bars but still able to achieve the taste, really very convenient.





Ingredients:
(A)
125g cake flour
25g cacao barry cocoa powder
1 tsp baking powder
1/3 tsp baking soda
1/4 tsp fleur de sel
40g castor sugar
30g brown sugar

(B)
1 egg (lightly beaten)
75g melted butter
80ml buttermilk

(C)
optional amount of strawberry chocolate chips
optional amount of dark chocolate chips (added to the batter)

Method:
1. Mix (A) together.
2. Mix (B) together in a mixing bowl.
3. Pour (A) into (B) and mix everything till just moistened. Stir in dark chocolate chips.
4. Spoon batter into muffin tray lined with paper muffin cups up to 75% full.
5. Stud in some chocolate chips on the surface of each muffin.
6. Bake at 190C - 200C for 20 minutes or till cooked.

Mine never has a dome .. its always flat even though I only fill 2/3 of the cup .. given up liao.

we simply love your original recipes, which is low sugar and low fat, and yet super tasty all the time.

Yes, you can use normal salt.
You can get about 6 - 7 muffins depending on the size of your muffin cups.
Needless to say for all powdery items you need to sieve them.
To get buttermilk, just add 1 tsp lemon juice to the milk and let it rest at room temperature for about 30 minutes before using.
