Banana Chocolate Muffin

I know I haven't posted much lately, as a matter of fact I have been very busy with the "this" and "that" in life.

After a hiatus of nearly 3 weeks, I baked some banana muffins. This was to get rid of the nearly expired yogurt and near to rotten bananas. I sort of use what I could get hold of to bake these muffins. The only luxury was the use of my favourite 66% Valrhona Feves choccolate.

I used this kind of bananas. Make sure they are nicely speckled before using.

Ingredients: (10 pieces)
Dry ingredients:

200g cake flour
1 tsp baking soda
1/4 tsp salt
40g castor sugar
40g light brown sugar

20 pieces 66% Valrhona Feves choccolate (Do not add to dry ingredients)

Wet ingredients:
185g banana mashed
2 tbsp maple syrup
70g plain yogurt
50ml milk
100g lightly beaten egg (2 small eggs)
40ml melted butter

Method:
1. Combine all dry ingredients till well mixed.
2. Combine all wet ingredients till well mixed.
3. Pour (1) into (2) and mix everything until just combined and batter is thick. Do not overmix.
4. Spoon some batter into muffin tray lined with paper muffin cups, top with 2 pieces of feves chocolate then add in more batter till the cup is about 80% full. Place a slice of banana on top of each muffin for garnish.
5. Bake at 190C for 20 minutes - 30 minutes or till golden brown and cooked.

Hi Florence,

just wanna drop you a message that I tried your recipe last weekend. It came out to have 8 muffins. I didn't use Valrhona Feves choccolate but used hershey's. Taste delicious and finished all of them in a day! =)

Hi,
You can use any amount of choc chips.
If you like more, then add more.
I used DelMonte bananas from the supermarket. Make sure the bananas are ripe enough.

Hi Florence,

I tried the recipe this morning. The muffin texture suppose to be moist or little bit wet? am i underbake? i bake for 190C 30 mins and the surface turn golden brown.

for (1) and (2), are u using mixer? (3) i just use the hand whisk to blend it well.

I have tried the banana chocolate muffins using your recipe. It turns out nice but kind of sticky. The muffins actually stick to the paper cups.
