Blueberry Yoghurt Muffins

Blueberries are supposed to be good for the eyes, so I bought a pack of these from UNY during their 5% off supermarket sale last weekend.

DD is still in the midst of her first term examinations and tomorrow will be her Maths exams. Guess if I bake these tasty blueberry yoghurt muffins for her tea break today, hopefully tomorrow she will have clear eyes and do not make anymore careless mistakes in her calculations...ha...ha!

Didn't think that yoghurt muffins could be so nice. Indeed an easy and delicious recipe - worth trying!

Ingredients:
(A) 145g self raising flour (sieve)
1/2 cup fresh blueberries or more (wash and dry with paper towel)

(B)1 egg (lightly beaten)
55g sugar
60g melted butter
2 tbsp milk
120g plain yoghurt
1/2 tsp vanilla essence

Method:
1. Mix (A) together.
2. Mix (B) together in a mixing bowl.
3. Pour (A) into (B) and mix everything in 5 strokes.
4. Spoon batter into muffin tray lined with paper muffin cups up to 85% full.
5. Bake at 190C for 20 minutes - 30minutes or till cooked.

Can I ask you how do you mix everything in 5 stroke. I definitely need more than that. The flour still not mix with batter. Any tips?

Florence, you should try it this way..mixing the yoghurt with the fruits. especially when the fruits are dried. like Dried cranberries, or blueberries or raspberries. soak the fruit w yoghurt for 30 mins ..brings out the flavour of the fruit.

I would do that if I use dried cranberries or raisins.
For these, I used fresh blueberries so I mix them with flour and do the rest of the steps.

Hi,

I baked your blueberry muffins yesterday and they are so moist and delicious...they are still moist this morning (24 hours later). Thanks for the recipe.

I used whole milk plain yoghurt..but could I subtitute with fat free yoghurt?

But fresh blueberries are really expensive, cost me HK$25 for 125g... one small pack.

Another question:

There's a type of traditional "kueh" (or snack?) I have often seen it in hongkong drama - it's either red or yellowish/light brown. I believed the red is red bean. Any idea what I'm talking about? Do you have the recipe for it? TIA

I mean using a hand whisk mix everything that is flour and the rest of mixture in 5 strokes or maybe 8.
The traditional HK drama kueh that you are talking about... no idea leh!
Is is round in shape, could it be "put chai ko"(read this in cantonese)?

Thank you! I have never tasted it before. I had only watched it on HK drama lor but the claypot puddings sure look like it. I have been searching for it online using the wrong chinese name. No idea if I could find those claypot moulds, but I will definitely give it a try someday. Perhaps I could use those moulds used for chwee kueh.

Also thanks for answering my question about making the muffins.

You can use cake flour, but you must add baking powder to it...about 1.5tsp.

Hi Florence, I baked these muffins for the second time but they were not as soft & moist as the first time i baked them :(

What could be the cause of this??
Could i hve overmixed the dry & wet ingredients? I mixed them in more then 5 strokes until the flour mixture is dampened..

Another thing is could i hve baked in the oven for too long??
The first batch i baked does not have a nice brown color like yours but they were soft & moist..Help..

This is blueberry muffins is the best I have ever eaten! Its moist, soft and fluffy, and taste awesome at the same time.

Oh, thought I should let your know I did it with the following variations, and it tasted just as good;
1. Oreo cookies,
2. Durian (yeah, its GOOD)
3. Ham and cheese,
3. Mangoes
4. Pineapples.

When the receipe calls for melted butter, wat does it mean? 1. to let butter soften itself in room temperature? or 2. to melt butter over small fire? Tanks so much!

You have to melt the butter to liquid form.
You can do it either by double boil method or use the microwave.

Thanks for sharing. I like your blog a lot.

I tried this recipe but replace the blueberry by raisins.

Unlike the result of other readers, mine is quite hard and dry (even have it on the same day).

I am not sure what's go wrong. I didn't manage to mix the flour witin 5 strokes but I actually folded in lightly and stir till the flour/egg mixture just incorporated.

Btw, I didn't melt the butter using double boil method, I heat it in a pot with very low heat, is that ok? Could it cause my muffin to be not as moist as it suppose to?

I made Blueberry Yoghurt Muffins yesterday afternoon. I fill up using egg tarts casing with 100% full & baked for 25min @ 190 degrees. Outer top surface is alittle hard, internal is rather spongy but not moist. Overall tast ok...Kindly pls enlighten me where went wrong

I love muffins but those sold in the shop are either very oily or very dry.

I was very happy when i saw your receipe. And, I try making however overall taste is very bland, texture is slight spongy but not fluffy and moist.

I use fresh blueberry to make.
I did hand beat eggs and sugar till slight light yellow.

All dry ingredients I used are bought fm Phoon Huat except skim milk, yogurt & fresh Blueberry

I would appreciate your reply where went wrong as there are no indication on the sequence of adding ingredients. Does it affect overall taste & texture.
