Banana Choc Chips Muffins

It's weekend and it's family baking today. My dds have been complaining that I haven't baked anything for their snacks lately. So will take a break from my CNY cookout series and baked these muffins for tea today. My MIL gave me a bunch of bananas yesterday and today they were nicely speckled so I used bananas and chocolate chips for these muffins.
A quick and easy snack suitable for the busy mums and yet satisfying for the kids!

Ingredients:
A) 1 egg
1 tbsp rum
120ml warm skim milk
50g melted butter
3 - 4 tbsp golden syrup
pinch of salt

B) 1.5 - 2 ripe bananas mashed with 1 tsp lemon juice

C) 1.5 cups plain flour
1 tsp baking powder
3/4 tsp baking soda
pinch of ground cinnamon

D) 3 tbsp semi-sweet chocolate chips

Method:
1. Mix (A) in a mixing bowl till well blended.
2. Stir in (B) and mix well.
3. Mix in sieved (C) with 2 tbsp of chocolate chips from (D). Do not overmix, otherwise you will get tough muffins.
4. Spoon batter into muffin tray lined with paper cups up to 85% full and top each muffin with some chocolate chips from the remaining 1 tbsp.
5. Bake at 190C for 20 - 25 minutes or till golden brown and cooked.

Mrs Tan,
I used a normal 6 cavity muffin tray.
Put the paper muffin cup into the cavity of the muffin pan and fill up the paper cup.

Hi,
I used Jamaican Dark Rum. You can omit the rum and replace with 0.5 tsp - 1 tsp vanilla essence if you do not wish to add alcohol to your muffins. :)

i don't think i will have all the ingredients to make your banana oatmeal muffins..will try this one instead...can i substitute golden syrup with honey? or something else..i only have either sugar or honey...thanks!
