Cornflake Cookies

Cornflake cookies ... very yummy! Nothing very new but I have not bake this before so I gave this a go this morning and this bake is surprisely crunchy and a real delish. Think my kids and her friends will finish the whole lot this afternoon.
I got this recipe from my first aunt last new year and haven't given it a chance to surface. Running out of ideas so I flash through my 3 big files of collected recipes and found this piece of hand-written recipe, must have jotted it down during our phone conversation. Of course, being an inobedient and adventurous lady I tweaked her recipe 'cos her's is a commercial one. Now! Here you go, a very nice and crunchy tweaked cornflake cookies recipe!

Ingredients: (30 pieces)
110g butter (room temperature)
50g - 60g castor sugar
less than 1/4 tsp salt
1 egg yolk
1/2 tsp vanilla essence
1 - 1.5 tsp orange zest
150g cake flour
1/4 tsp baking powder
1/8 tsp baking soda
50g cornflakes

Raisins or cherries for garnish (optional)

Method:
1. Sieve flour together with baking powder and baking soda.
2. Cream butter with sugar and salt till creamy.
3. Add in the egg yolk and vanilla esssence and cream till well combined.
4. Stir in the orange zest.
5. Fold in the sieved flour mixture and cornflakes. Mix till you get a soft dough.
6. Divide dough into equal pieces of about 12g each, shape into flat rounds.
7. You can stick a raisin into the middle of the cookie before baking. (This step is optional).
8. Bake at 175C for 18 - 20 minutes or till golden brown.

I just encounter your Blog and found it very helpful and also found recipes that I am looking for too. Just like you I love baking and making desserts but when it come to the 3 main meal forget about it. While going through your Blog I notice there were questions about cake flour. You could purchase cake flour at major US grocery store. It is called SoftaSilk Cake Flour by Phillsbury. Comes in a box. You could also make your own cake flour (2 tablespoons cornstarch in measuring cup. Fill with unsifted all-purpose flour. Sift 3 times. 1 cup of this equals 1 cup of sifted cake flour.) The cornflake cookies are so yummy. The whole tub gone within a few moments. I myself ate four in a go. Gonna bake more and more of it in the next few days.

Your Cornflake Cookies look so nice. When I first baked Cornflake Cookies(hehe.. with oven toaster early this year), the centre was soft. I had to break every cookies into half and rebake for a few more mins. *lol*

Hi Florence,

I enjoy reading your blog!! I am also a baking freak... I love to bake, but i am no good at cakes, but cookies... wanna share with you another cornflakes crunchies:-

Ingredients:-
105g Butter
120g Sugar
1 egg yolk
30g plain flour
90g self raising flour
180g rasins
crushed cornflakes

Method:-
Cream butter and sugar till light n fluffy, add egg yolk. Sieve both flours, add into mixture slowly till well mixed. Lastly, add in raisins and mix well. Roll tsp of the mixture with the crushed cornflakes. Bake at 175 degrees for 18-20mins.

This is a very good recipe, do try on it...

hie florence, i found the recipe i wanted on your blog and i have to say, the Cornflake cookies are amazing. The only thing that i regretted was that i didn't made enough to eat =(

one question though, how do i make double portion of it ? Do i double every single ingredients or just some specific ones ?

Hi Florence,

I halve the recipe and they turned out very delicious and crunchy! But the only thing were the raisins which seemed to have burnt and had a bitter taste. I shall make another round without the raisins. Thanks for sharing.

It's a very good chance of mine to find your blog which is very handy. I've sought for cornflake cookies in many web sites but almost all of them don't show a picture of their cookies which made wonder what will they look like. Also, most recipes require me to add pecans and/or peanut butter which I don't have in my kitchen now (and don't wanna buy coz I don't like them much..haha). Thank you very much for this recipe. Hi dear,
You don't need to buy the orange zest, just grate the orange part of a cleaned orange to get the zest.
The zest really enhanced the flavour of this cookie, however it is ok to omit it.

Thank you for another wonderful recipe. I had tried out yesterday and it's really good. The orange peel is special and goes well with the cornflakes. Yummy and it's so easy to make! I'm going to include it in my CNY bake.

I would like to try out this receipe for this coming CNY. Could I replace cake flour with top flour since I have lots of it left in the kitchen. For the orange zest, do I cut very thin on the orange skin?

Hi,
Just measure out 150g plain flour, remove 2 tbsp of it and replace with 2 tbsp corn starch and you will get cake flour.
