Mooncake Cookies

Made these mooncake pastry cookies (豬仔餅) for my sisters and nephews. The kids prefer this over the mooncakes. So here it is and will be sending them over as soon as possible.
The last time I made these was like last mooncake festival. When I made them this afternoon I sort of made a boo boo out of everything. Like, the dough got stuck onto the moulds, the cut pastry was out of shape and etc. See, you have to practise to make things work. Luckily, I did them today so, when it comes to mooncake festival I will not make the same mistakes again.

Ingredients:
300g plain flour
195g golden syrup
90g peanut oil
1.5 teaspoon alkaline water

Egg wash: Beat 1 egg with 1 teaspoon water

Method:
1. Mix peanut oil, golden syrup and alkaline water well.
2. Sieve flour into a mixing bowl, make a well in the flour and stir in (1).
3. Do not overmix.
4. Cut dough with cookie mould and place in lined baking tray.
5. Spray with water before popping it into oven.
6. Bake at 180C for 10 minutes, remove from oven, cool it and apply egg wash.
7. Pop it back to oven and bake until golden brown in colour.

Notes:
Work with floured hands and floured cookie moulds on a floured surface.

Btw, how many pieces did you bake?
Don't forget to courier the mooncake to us during mooncake festival. Did you try out the Pandan Paste ?

I really like these mooncake cookies, but i cant find golden syrup here,I used corn syrup to make my mooncake last year.Of course the result only so so .
Do you know how to make golden syrup?^_~

Hi Angie,
Maybe you can try this:
Put 1/4 cup sugar in a saucepan and even it out.
Sprinkle in 1/2 tsp vinegar and 1 tsp water.
Simmer it over low heat for 5 minutes without stirring.
After 5 minutes turn the heat to medium and cook till it has a light caramel color. This should take about another 5 minutes.
Remove from heat and add in 1/3 cup corn syrup and let it stand for 3 minutes without stirring.
The mixture should be bubbling then.
Stir well only when the bubbling has stopped.

Easier option:
a) Simmer over heat 2 parts light corn syrup + 1 part molasses till well mixed.
b) 1 part honey + 1 part light corn syrup
c) Mix 1 part light corn syrup + 3/4 part honey + 1/4 part maple syrup

I made these cookies last nite. Cookies not that hard inside. Is it correct? BTW, I can't find peanut oil so substitute with canola oil.

That's right - the texture.
It's fine to use canola oil instead of peanut oil.

Hi florence, I have tried this recipe twice but not able to get the same nice results as you. It seems that the top will crack such that the surface is not smooth and even. In addition, i am not able to get the even nice brown color which you manage to get. Any idea what could have happened? I used a silicone brush to brush on water instead of spraying besides this i followed every step as mentioned in your recipe.

Try to reduce the oven temperature, maybe use 175 - 180C. :D
