SweetCorn Pudding
At last, I managed to get the right texture required for pudding. I have always wanted to make puddings like those we eat during "yum cha" in the restuarant and this is the one! It is really very smooth and the sweetness is just right.
I have edited the Coconut Red Bean Pudding recipe to be similar to this recipe as the texture for this pudding is much better.

Ingredient:
75g corn starch
200ml coconut milk
200ml milk
15g agar agar strands
1000ml water
125g castor sugar
400g sweet corn in cream sauce (about 1 can)
Method:
1. Mix corn starch, coconut milk and milk together and blend till smooth. You have to strain it if it is not smooth.
2. Boil agar agar strands in 1000ml water till dissolved. Turn off the heat and strain agar agar solution into another saucepan. Turn on the heat and add sugar into agar agar solution till sugar dissolved and the solution is bubbling hot.
3. Turn the heat to low and pour in the corn starch mixture and stirring at the same time till the mixture is thicken.
4. Stir in the sweet corn.
5. Pour the pudding into moulds rinsed with cold drinking water, cool it before sending to chill in the refrigerator.

I made this SweetCorn Pudding over the weekend. It was indeed very smooth and the sweetness was just nice.
I have not eaten this in any Tim Sum Restaurant here so I can't tell the difference. But it certainly taste quite like the pudding we have over here using Hoon Kwee Flour, sold by Bengawan Solo. Those wrapped in plastic paper with a piece of banana in it.
Thanks for a nice & easy recipe. The next time I made this, I will add in more corn as I find that the corn taste is not so strong. I like the nice sweet smell of sweet corn :)

Ooops, I forgot to mention that I used agar agar powder instead of agar agar strands. The weight is the same i.e. 15g of the powder.
And I didn't use corn flour, but I used Modified Crystal Starch.

I got the Modified Crystal Starch from Anna Culinary in Spore. It's called :水晶定粉 (the 3rd word should have the 3 dots representing water. Can't find the right word in the Chinese software I used). It's supposed to be the top grade of Tapioca Flour.

The Pearl Jelly Powder is known as: 珍珠果冻粉. Or it's known just as: 果冻粉 or Jelly T in those Taiwanese recipe books.
Since your sister is going over to HK, get them to get it for you. A small bottle of 20g costs about $5/-. I buy by 1/2kg :) 500g costs me about $42/-
This is the powder that gives you the soft clear chewy texture of those Japanese Jellies, sold in cups in the Japanese Supermarket.

Yes, I can see the pic. Very pretty strawberry milk pudding. Mine version is just the no fuss easy one.
果冻粉 is readily availble in HK and it comes in assorted flavours too. However, the modified crystal starch is something new for me. I'll do a search in HK first before I ask my sis to buy.

How long d0es that need to bake??
Hi,
This pudding needs no baking, just cook it in the saucepan as per instructions and put them in a mould. Send it to the refrigerator to be chilled till set and it's ready to be eaten. :D
The sweetcorn pudding, blend mean put in the blender to blend it with the corn kernel, coconut milk and milk is it??
