No-Bake Durian Cheesecake
Durians are in season now! Bought a pound of Golden Pillow from Park 'n' Shop this morning. I chose the soft and very ripen ones for this cheesecake so that when you puree it there will not be too much fibers.

Ingredients:
Biscuit base
110g digestive biscuits crushed
40g melted butter
Durian Filling
160g cream cheese
80g castor sugar
4 eggs
200g sweet whipping cream (whipped)
25g gelatine powder dissolved in 120ml hot water
180g durian puree
Jelly Topping
8g gelatine powder
45g mango jelly powder
240ml boiling water
Method:
1. Mix biscuit crumbs with melted butter and press it firmly onto the base of a springform cake pan and chill in the fridge for 30 minutes.
2. Whip the sweet whipping cream till mousse state and chill in the fridge.
3. Melt the gelatine powder with 120ml water in hot water bath and leave to cool for use later.
4. Beat cream cheese with sugar till soft and smooth.
5. Add in the eggs one at a time, beat well after each addition.
6. Blend in the durian puree then whipped cream.
7. Stir in the cooled gelatine solution.
8. Pour cheese mixture onto cake base and chill for 30 minutes.
9. Remove from fridge and pour the jelly topping over the chilled cheesecake.
10. Chill in the refrigerator overnight so that all the durian aroma will be "infused" into the cake.
11. To remove chilled cake from the cake pan, wrap a hot towel around the pan and the cake will dislodge itself easily.

I love durian but never if it's cooked.
Did u make yr cake in a 20 cm pan ? Can I omit the eggs? I have this phobia of eating uncooked eggs. I want to try this cake when durian is in season. I hv alr seen some durian sold at pasar malam last week. Oh yes, i made a peach mousse cake following yr instructions and it turned out quite pretty. Thank Q sifu

You can use the mousse method with cheese to make this cake and thus omitting the raw eggs. I used a 20cm cake pan.
I'll do another one without raw eggs next week so you can try that one then!

Method:
1. Dissolve gelatin in 60ml hot water. Keep warm for use later.
2. Whip cream till 70% stiff or mousse state.
3. Add gelatin solution into mango puree and mix well.
4. Add mango gelatin mixture into whipped cream and combine well.
so am i right to follow the about method n replace mango puree with durian?
and when do i add in the cream cheese if using the mousse method?

Cream the cheese with sugar then add durian puree mix well, gelatine solution mix well and lastly fold in the whipped cream.

Maybe you should try this:
225g cream cheese,60g castor sugar, 250g whipping cream and 250g durian puree. The rest remains the same. :D

I came across the 200g sweet whipping cream in this durian cheesecake recipe.

Sweet whipping cream = non-dairy cream.
Whipping cream = dairy cream
But you can use the same cream as in the mango cheesecake. :)

Well, I suppose you could replace it with agar agar but that would be harder to handle.

I am still planning to make mango cheesecake and I was browsing through other cheesecake recipes here and found this. Is it ok if I replace the durian puree with mango puree? I will also add chopped mangoes inside batter.
Cos this recipe uses a 20cm springform pan, similar to my 8" springform pan.
If it's ok, then I will use this recipe instead of the Chilled Mango cheesecake recipe which u were using a bigger pan.

Don't use this as a guide for the 20cm springform pan.
Use the actual mango cheese cake recipe will be better.

Hi Florence, I've tried out this cake but I encountered a problem.
After pouring the cheese mix to the pan with biscuit crust, I left it to chill for a while, then topped with canned fruits and kiwi. I then poured the jelly over the set fruits, but the jelly did not set for a few hrs, what do u think went wrong?
Also, if we are using normal jelly powder, do we still need to add gelatine? Cos normal jelly would already set by itself after a few hrs right?
I had no choice but to scoop out the jelly and did other deco.

Yes, you still need to add gelatin to the normal jelly powder. I hope you can follow the recipe closely if this is your first time, otherwise the end product might not be too good. Lucky you can salvage it this time round and not put your effort and monies to the waste. Once you are familiar with the ingredients then you start to play around with them.

Also, I've read somewhere that kiwi or other acidic fruits will not allow the jelly to set, is it true?
