Mango Marshmallow Cake

A yummy and refreshing chilled cake for the coming warm weather.

I should have done a strawberry flavoured one as the red colour will turn out prettier. However, the strawberries that I got from the supermarket were too sour so I had to opt for sweet sweet mangoes instead.

The other thing I should have done is to add diced mangoes into the marshmallow layer instead of just marshmallow by itself which is a little dull.

I used LeeLee's recipe to make this cake and am still waiting for her approval to publish her recipe in my blog.

So, till then there will be no recipe at the moment and you can only drool over it!

Ingredients for Base:
200 gm digestive biscuits
80 gm melted butter

Method:
1. Crushed digestive biscuits and mix well with melted butter.
2. Press into a 8” cake pan.
3. Refrigerate for 30 minutes for use later.

Ingredients Marshmallow filling:
200g - 250g marshmallow
150ml milk
300ml whipping cream
2 tsp of gelatine powder

Method:
1. Put all the ingredients into a pot.
2. Doubleboil over small fire until gelatine is dissolved.
3. When it is a little cooled, pour it into cake base.
4. Chill it for 15 minutes, then add the shaped mango pieces. Put it back into the refrigerator to chill for another 15 minutes.

Ingredients Jello topping:
1 pkt of mango Jello (90g)
400 ml of water
2 tsp of gelatine powder

Method:
1. Boil all ingredients until dissolved.
2. Pour cooled mango jelly solution gently onto marshmallow layer by big tablespoon.
3. Chill in the refrigerator for 3 hours till jelly is set before serving.

Notes:

You can also arrange some sliced fresh mangoes on the biscuit base just before pouring in the marshmallow and also on top of the marshmallow layer. You can also add in diced mango pieces into marshmallow mixture. I shaped the mango pieces with a cookie cutter.

I saw this marshmallow cake in another Singapore website. Exact ingredients to LeeLee's original recipe posted at KC. But LeeLee did say the recipe was from her friend. Wonder who is the real originator.

Hi Gina, what I said was my friend and I came up with this recipe. My friend tasted this cake from I don't know where and she came back and told me about it. So that is how this recipe was born. Lee Lee

Doubleboil: Immerse the vessel containing the required ingredients into a saucepan with boiling water and cook.

Hi Florence,

I would love to try this cake but the only problem is that i couldn't get any jello here. Can i use 12g of agar-agar powder for the topping of this cake?

You can use agar agar but I'm not sure how much you should use. Have you made agar agar before? Maybe you can refer to some agar agar recipes at KC to check how much you need!

i tried this cake and my family loved it. But I must have poured the jelly layer too early that the some of the jelly sank to the bottom of the cake. Its definitely a keeper

Oh yes, you have to wait for the marshmallow layer to set before you pour in the jelly layer.

Just wondering if u know what i can substitute the whipping cream with? My mom doesn't take dairy products but this cake looks so nice that i'm tempted to make her one. Also may i substitute the milk with fruit juice?Many thanks~

Yes, you can substitute with soy bean milk or even mango juice.

Hi,

I'm kind of confused. Sorry, this is my first time trying to bake a cake like this because it looks so pretty^^ So after I bake the cake, do I add the marshmallow filling and then let that cool in the refrigerator and then pour the jello topping on top of the marshmallow filling? Thank you!!

Composition of cake:
Layer 1 : biscuit cake base - just use digestive biscuit, no need to bake a cake.
Layer 2 : Marshmallow filling
Layer 3 : Mango Jelly

Hey Florence, I was just wondering for the recipe of this.
When you put crushed biscuits and butter together, then press down on the tin. To cut the cake in pieces later, wouldn't the biscuits stick to the bottom? and when you take it out, it'll be a little messy?

Of course you have to line the base of the cake pan with a paper cake board or baking paper first before doing the biscuit base.

On the bottom only. When the cake is thoroughly chilled, use a hair dryer and warm it all around for easy and nice release of the whole cake.

when you cut the cake, is the filling soft? or hard? because i remember just heating up marshmallows itself, it started hardening up.

Oh, nevermind about my previous post . When you put all the ingredients together, to make the marshmallow layer, do you have to mix it at all? or just let it double boil? Also, how do you measure the grams of the marshmallow?

Allen,
When making the marshmallow layer, you have to stir the mixture so that the final mixture is homogenous.
I used a digital scale to measure the marshmallow.

So you basically have this bowl or pot or something with ingredients, put it in another bigger pot with water, mix it while it's double boiling?
I don't ahve the digital scale >< so approximately how many marshmallows is it? if you can recall

The best way is to check out the weight of your pack of marshmallow and scale out what you need for this cake.

Here, we dont have anything like jelly or jello or anything.. is yello the sorta wobbly pudding? It sounds like it, but Im not really sure.. ^^;;
